Maple-Mustard Baked Chicken

Maple-Mustard Baked Chicken is a dish made by baking chicken with a sauce made from maple syrup and mustard. The sauce is typically made by mixing together maple syrup, Dijon mustard, olive oil, garlic, and herbs, and then coating the chicken with the mixture before baking it in the oven. The result is a sweet and tangy dish with a crispy, caramelized coating on the chicken.

{Note: be sure to use real maple syrup, not pancake syrup here.}

Ingredients:

  • 3/4 cup spicy brown mustard
  • 1/4 cup maple syrup
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon plus 2 teaspoons red wine vinegar
  • 4 boneless, skinless chicken breasts (about 2 lb)
  • chopped fresh rosemary, to garnish

Method:

  1. Preheat oven to 425 F. Sprays a 13x-9-inch baking dish with nonstick cooking spray.
  2. In a measuring cup, whisk together the mustard, maple syrup, brown sugar, and red wine vinegar until well combined. Season the chicken on both sides with salt and pepper, then place in the prepared baking dish. Pour the mustard mixture over the chicken.
  3. Bake for 15 minutes, then remove the pan from the oven and spoon some of the sauce from the bottom of the pan over the top of the chicken. Continue cooking for 8-10 minutes, or until the chicken is cooked through (it will register 160-165 F on an instant-read thermometer). Remove the pan from the oven and let the chicken rest for about 5 minutes, then garnish with fresh rosemary and serve!
